This is one of those wholesome recipes that even the pickiest of eaters love. My father-in-law could and would live off of this recipe. My one year old son could wrestle him for it. Its to die for, a staple in my home, a must try for all ages, shapes and sizes. Lets warm up!
Ingredients: 5 medium russet potatoes. ( peel & cut ) 2-3 garlic cloves, minced 3 cups chicken broth/stock 1 can cream of chicken 1 medium onion diced 1/2 tsp Salt Pepper to your liking 1 tbsp butter 1 tbsp flour 1 cup of milk 2 cups shredded cheese
Garnish; bacon, green onions, cheese, sour cream
How to cook;
Set IP to Sauté When says “Hot” put butter in and melt Place onions in the pot and cook 3-4 minutes until soft Put garlic in, cook 1-2 minutes longer, not burning the garlic Stir in broth, cream of chicken, potatoes , salt and pepper. Put lid on pot and secure to “sealed” Place pot on “Pressure Cook” 10 minutes Quick release when pot is finished. While that is cooking, stir flour and milk together. When ready, stir in milk/flour mixture . Set pot back to sauté Look cook 3-5 minutes, stirring occasionally until thickened Stir in cheese
Serve topped with more cheese and additional garnishes.
