Oh man, when I think of this recipe, I always get hungry. This is one of my go to recipes in my instant pot. It is not your typical chili, but I would put this up against anyone in a chili cook off. Note with the instant pot, this may cause for spewing when quick releasing, if this happens, just simply turn it back to sealed, wait 3 minutes and try releasing again. Repeat as needed.
Ingredients: 2 chicken breasts Can of white beans drained Can of black beans drained Chopped onion Can of diced tomato (juices and all) 1/2 cup of chicken broth or stock 1/2-1tsp of chilli powder (1/2 tsp for kids) 1 tsp of cumin 1 packet of ranch seasoning 8oz of cream cheese to top
Directions:
Place everything in pot exactly how it is listed in the ingredients section. Pressure cook for 20 minutes, sealed, let release naturally for 10 minutes, quick release for remainder.
Take breasts out to shred, return to pot and stir together.
Garnish with cilantro, avocado and/or sour cream.
