Instant Pot Roast Beef

Its a chilly Sunday afternoon, it's three hours until dinner time, you have been chasing the kids around all day keeping them entertained indoors. You are exhausted and your husband, who has been sitting on the couch through all of the chaos, asks,


"What's for dinner honey?"


Your heart immediately drops, as you completely forgot to put that roast that is sitting in the fridge in the crock pot this morning.


Good news momma, you have an instant pot and you still have time to make an effortless, delicious wholesome dinner for your family.


This recipe is excellent for someone who wants to break in their instant pot and learn how to use multiple functions on their brand new kitchen contraption. This roast tastes like it has been cooking all day, but was cooked in only 60-90 minutes (cooking times vary based on size of roast.) I have posted a how to video below. I used my ninja foodi for this recipe, but you can use your instant pot, everything is still the same.


Ingredients:

- Ranch Seasoning

- Italian Dressing Seasoning

- Garlic Powder

- Pepper/Pink Himalayan Salt

- Italian Seasoning

- Bouillon or Stock (3-4 cups)

- Olive oil

- Roast, cut of your choice


Directions:

  1. Start by seasoning your roast top to bottom, front to back, side to side - you get the point.

  2. Turn your IP to the "sear/saute" setting and drizzle 2-3 tbsp of oil in the pot.

  3. Once your pot is hot and sizzling, lay your roast in the pot. Let it sear on both sides for roughly 2-3 minutes, get a nice color and crust on the roast.

  4. Remove the roast and deglaze the pot. Add your bouillon & water or your stock whichever you are using.

  5. Then scrape the "burnt" bits off the bottom of the pan with wood or silicone spoon, metal will scratch your pot up. This is the real flavor of your roast developing.

  6. Add roast back to pot, lock lid on, switch knob to sealing. Select pressure/manual and set it about 30 minutes per pound.

  7. Once finished, release the pressure, it will be loud. If you are wanting your potatoes and carrots as well, you can add them in the pot with the roast, lock lid back on, knob on seal, and pressure/manual cook it for another 8 minutes.
